How to Make: Vegan Stuffed Peppers

I was craving these bad boys one day and decided to whip some up! I definitely did a happy dance every time I had them too. 


Cook Time: 25-30 mins

Prep time: 20 mins



2 peppers (green, red, or yellow)

Pasta sauce

Multigrain rice




Coconut Oil

Vegan Cheese

Basil, Salt, Pepper, Onion Powder, Garlic Powder, Red Pepper





Slice your peppers in half, they need to resemble boats. 

Chop your mushrooms and onions so they are ready to be sauteed

Boil water for the rice

Preheat the oven to 400 degrees




  1. Heat and add coconut oil to a skillet for the mushrooms and onions

  2. Season the mushrooms and onions with the salt and pepper - saute and remove

  3. Add pasta sauce to pot and bring it to a  simmer and add basil, salt, pepper, onion powder, garlic powder, red pepper - stir occasionally

  4. While the sauce is heating up start boiling up some rice (follow instructions on box lol)

  5. Add the mushrooms and onions to the batch. Reduce the heat to a low setting and stir occasionally

  6. Drain the rice and add it to the pasta sauce and stir

  7. Let it do its’ thing for about 5-8 mins

  8. Coat your peppers with heated coconut oil. Be careful not to burn yourself.

  9. Add the filling to the pepper until it’s full

  10. Add vegan cheese on top

  11. Bake for 25-30

  12. Enjoy it with a side dish or alone!

**The pepper should be easy to cut, if it is still tender place them back in the oven
