Quick and Cheap Chickpea Salad (Vegan and Gluten-Free)


Hiiiiiiii guys! I’m back after a long long long time! Today I will be sharing my favorite quick and cheap chickpea salad recipe. It’s perfect for the days or nights when you what something that is fast but still healthy!  ALSO this meal is legit under $10!


Prep Time: 10 mins

Cook Time: 5 mins 


Ingredients:


1 can of garbanzo beans (aka chickpeas)

½ stalk of celery 

½ of an onion 

Spicy Mustard 

Vegan Mayo

½ of a jalapenos 

½ of a lemon 

Seasonings: Black Pepper, Salt-Free Seasoning Onion Powder, Garlic Powder, Cajun Seasoning, Paprika



  1. Drain and rinse the chickpeas

  2. Dice celery, onion, and jalapenos  

  3. Add chickpeas, celery, onions, and jalapenos to a food processor (**If you don’t have a food processor just mash the ingredients together :)

  4. Add about 3 tablespoons of vegan mayo 

  5. Add about 2 tablespoons of spicy mustard  

  6. Add seasonings 

  7. PULSE the ingredients together until the texture is chunky (if you blend it, you’ll be having hummus lol) 

  8. Severe on 2 pieces of gluten-free bread or a salad!
