How to Make: Vegetarian Chili

This recipe is my go to when I know when I’m going to have a busy week and need something quick and delicious to make that will be satisfying every time!


Cook Time: 2 more hours on low heat

Prep time: 20 mins.


1  yellow onion

2 cups of pico de gallo

1  can of kidney beans (or whatever type of beans you like)

2 cans of fire roasted diced tomatoes

1 can of spicy chili beans (at Kroger)

1 can of black beans

3 bell peppers

Chilli powder

Seasonings: Black Pepper, Salt, Onion Powder, Garlic Powder, Cajun Seasoning, Paprika


  1. Cut veggies into small pieces.

  2. Add veggies to a warmed skillet. Add the list of seasonings above to them.

  3. Saute veggies for a couple of mins.

  4. Add the sauteed veggies to a big pot on low heat

  5. Add the cans of diced tomatoes

  6. Add the beans, don’t drain the spicy chili beans, the other ones you can.

  7. Add Chili powder (I added the list of seasonings to chili powder as well)

  8. Add a cup of water (add more if necessary)

  9. Mix thoroughly

  10. Let it cook for about  1-2 hours on a low heat setting. I went to the gym for about an hour and a half and when I came back it was ready to eat.

  11. Add whatever toppings you like.

  12. Enjoy!
